Le Louis XV opened in 1987 on the ground floor of the Hôtel de Paris, born of a wager between the Société des Bains de Mer and Alain Ducasse: three stars within four years. It took fewer than three. The room has kept its character ever since — gilt, mirrors, light from Casino Square through tall windows, and a terrace in fine weather.
The cooking is Mediterranean and begins with the produce: vegetables from Provençal gardens, fish from the coast, olive oil, Riviera citrus. Since 2022 Emmanuel Pilon has led the kitchen alongside Alain Ducasse, while the service and the Hôtel de Paris cellar complete the meal.
The house handles its own reservations and the room holds few tables. TGZ often secures one, subject to availability and the house's rules, and tells you plainly when the date you want cannot be done.
