Le Louis XV — Alain Ducasse at the Hôtel de Paris has held three stars for decades; Le Grill on its opening roof, Yannick Alléno's Pavyllon Monte-Carlo at the Hermitage, Marcel Ravin's Blue Bay and Joël Robuchon's Yoshi complete a starred line-up of rare density, between the Carré d'Or and Monte-Carlo.
