Yannick Alléno opened Pavyllon at the Hôtel Hermitage in April 2022, after taking over the hotel's former restaurant, the Vistamar. The idea comes from his Paris Pavyllon: a long counter facing the open kitchen, where each plate is finished in front of you, in a blue, wood-panelled room.
The menu follows the seasons and the Mediterranean — fish, vegetables, sauces as a guiding thread, desserts with little sugar. In fine weather the garden terrace looks over the harbour and the Rock. The MICHELIN Guide 2026 keeps it at one star.
The counter has a limited number of seats, each with a view of the kitchen. TGZ often secures the places you want, counter or terrace, depending on availability and the house's rules — and says so simply when it cannot.

The right moment
