Les Ambassadeurs is the fine-dining room of the Hôtel Métropole, a few steps from the Casino. Christophe Cussac, who trained under Joël Robuchon, cooks a classic French line open to the Mediterranean, held to one rule: few flavours on each plate, so every ingredient keeps its place.
The room was designed by Jacques Garcia in bronze, ivory and gold. Service matters as much as the kitchen here: Marco Tognon, who runs the dining room, received the MICHELIN Guide Service Award in 2026. The restaurant opens for dinner only, and elegant evening dress is expected.
